Creamy Kale Salad

Ingredients
Serves 6
2 bunches of kale, torn into pieces
1 medium sweet onion
2 colored sweet peppers
1⁄2 ripe avocado
2-4 key limes (depending on how much juice it yields and how citrusy you like it)
1⁄8 tsp cayenne pepper
3 TB coconut oil or grapeseed oil
Sea salt to taste
Preparation
- Wash and prepare kale, place in a bowl big enough for mixing.
- In the same bowl, add onions, peppers, avocado, lime juice, cayenne pepper, oil, and mix, making sure to massage the kale and squeeze to make tender.
- Gradually, add sea salt to taste.
