In the Vegetarian Kitchen with Oneka Willabus

Oneka Willabus is our guest columnist this month. She is a vegan chef and Doctor of Naturopathic Medicine. Try her delicious vegetarian recipe, a kale salad recipe. She’s a well-known Atlanta vegan chef that loves whipping up tasty, healthy meals for loved ones and clients.

Oneka is also an AFAA Advanced Certified Personal Trainer Her journey into a natural lifestyle began while in college, earning a BS in Exercise Science.

As a mother, she decided to seek natural solutions to her son’s asthma and to alleviate emergency room visits for monthly steroid shots. Her natural remedies to heal her family started when she removed dairy and meat from their diets.

Creamy Kale Salad


Serves 6

2 bunches of kale, torn into pieces
1 medium sweet onion
2 colored sweet peppers
1⁄2 ripe avocado
2-4 key limes (depending on how much juice it yields and how citrusy you like it)

1⁄8 tsp cayenne pepper
3 TB coconut oil or grapeseed oil
Sea salt to taste


  1. Wash and prepare kale, place in a bowl big enough for mixing.
  2. In the same bowl, add onions, peppers, avocado, lime juice, cayenne pepper, oil, and mix, making sure to massage the kale and squeeze to make tender.
  3. Gradually, add sea salt to taste.
